Choratan is a traditional Armenian dairy product made from tan by straining it and drying the resulting paste in the sun in the form of small balls. These dried balls are stored as a winter supply and used in various dishes. Before use, choratan is crushed in water to obtain liquid tan, which can serve as a base for tanapur, galachosh, borani, and other dishes. Choratan is known for its light sour taste and nutritional properties, making it one of the important ingredients of Armenian cuisine.
